1 large yam
1 medium squash (Butternut)
1 medium onion
bunch of cut up fresh mushrooms
bunch of grapes
oil
Parmesan cheese

Directions:
Directions:
Peel yam and squash and cut into chunks. Slice onion and mushrooms and saute. In bowl place yam, squash, onion, mushrooms and grapes. Toss all together with olive oil. Season with salt, pepper, dash or any spices you like. Place in baking dish and bake for 45-60 minutes at 350º. Last 5 minutes sprinkle cheese on top. Serves 6. Sounds weird with the grapes but they add a nice flavor and juice.
