Chocolate Mousse Cake Recipe

2 c. chocolate wafers crumbs
1 stick butter

1 lb. semi-sweet chocolate
2 c. heavy cream
6 tbs. powdered sugar
2 eggs
4 egg yolks
4 egg whites

1 c. whipping cream
sugar to taste

Add melted butter to cookie crumbs. Press in bottom and up sides of 10" springform pan. Bake 300' for 10 minutes. Refrigerate.

Soften Chocolate in top of double boiler (water simmering, not boiling). Cool to 95' Add 2 whole eggs and mix by hand. Add yolks and mix by hand. Set aside.

Mix whipping cream and powdered sugar with electric mixer until peaks form. Set aside.

Beat egg whites until stiff. Take small amount of cream and egg white mixture and add to chocolate. Stir until just mixed. Transfer chocolate mixture to large bowl. Add whites and cream and fold in. Pour into crust.

Chill at least 6 hours.

Loosen cake with sharp knife.

Whip cream and sugar and top cake.
