3 cups zucchini slices
1 cup onion rings
3 Tbsp butter, oil or margarine
1 cup chopped tomatoes
Romano or any shredded cheese
Parmesan cheese to sprinkle on top

Directions:
Directions:
Heat pan with oil to medium heat. Add onion rings and heat until soft. Add zucchini slices and saute until tender crisp. Add shredded cheese and stir to melt. Turn into serving dish, sprinkle with Parmesan and serve. Serves 4. Very quick and easy side dish. Can also be doubled.
