Crust:
2 tbl soft butter,
1 1/2 c. flaked coconut,
Spread 9 inch pie plate with soft butter. Press coconut firmly into butter. Bake at 325 for 10 min., or until golden brown. Cool.
Filling:
1 tbl. unflavored gelatin,
1/4 c. cold water,
4 egg yolks,
1/3 c. sugar,
1/4tsp. salt,
1/2 c. lemon juice,
1 1/2 tsp. lemon peel,
4 egg whites,
1/2 c. sugar,
2 golden delicious apples, pared, cored and coarsely grated.

Soften gelatin in cold water. Beat egg yolks slightly; add 1/3 c. sugar, salt and lemon juice. Cook in sauce pan over medium low heat stirring constantly, until thickened. Add lemon peel. Add gelatin, stirring until dissolved. Cool until it just begins to jell, then stir in grated apples.
Beat egg whites until frothy; add 1/2 c sugar gradually, beating until soft peak stage. Fold into lemon apple mixture. Pile into baked coconut shell. Top with sweetened whipped cream, if desired
