1 c. flour
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg yolk, well beaten (save white, see below)
1 c. milk
1 tbsp. butter, melted
1/2 c. finely chopped or grated apple
1 stiffly beaten egg white

Directions:
Directions:
Sift dry ingredients together. Combine egg yolk and milk; stir in butter and apples; fold in egg white. Let stand a few minutes. Cook on hot griddle, using 1/3 c. for each pancake. Spread with spatula. Dot with butter and sprinkle with confectioner's sugar. Makes 12.
