1 batch of Brown Butter Nuggets
3 cups whole milk
½ cup sugar



Ice Cream Custard:

3 egg yolks
½ cup sugar
½ cup heavy cream

Directions:
Directions:
Simmer the milk with sugar in a saucepan, stir until all the sugar is dissolved. Remove from heat and add the Brown Butter Nuggets and gently stir for 5 minutes. Cover saucepan and let cool for about an hour or two or overnight. Strain out the nuggets.

CUSTARD: Whisk egg yolks with the sugar until slightly thickened. Heat the flavored milk to a simmer, remove from heat, then very slowly whisk into the egg mixture in small amounts. Pour this mixture back into the saucepan. Over medium heat, whisking constantly, bring the mixture to 180º F. Cool mixture and refrigerate overnight. Strain out any nuggets left over as this will ruin the ice cream. Stir in the heavy cream Freeze as directed.
