1 lb veal scaloppine (or veal cutlets pounded very thin)
1/4 cup flour
2/3 cup beef broth
1 tablespoon butter
1/2 cup dry marsala wine
1 cup sliced mushrooms
1/4 teaspoon salt
1 tablespoon chopped parsley

Directions:
Directions:
Whisk 1 tablespoon of flour into beef broth and set aside.

With remaining flour, dredge the veal.

In nonstick skillet on med/high melt butter and cook veal 1 minute and 30 seconds per side and remove from pan.

Add wine to deglaze pan, scraping up browned bits. Add broth/flour mixture, mushrooms and salt. Bring to boil. Reduce heat and simmer 3 minutes. Return veal to pan. Garnish with parsley.
