4 salmon fillets – should be 1” thick (6 oz each)
Cooking spray
1/2 cup pineapple preserves
1 1/2 tablespoons lime juice
1 tablespoon Dijon mustard
1 teaspoon grated ginger
1 teaspoon minced garlic
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions:
Directions:
Preheat oven to 425º.

Foil line a 9x13 baking sheet and coat with cooking spray.

Combine preserves and remaining ingredients and brush over salmon.

Bake 425º for 15 minutes or until fish flakes easily. Fillets thicker than 1” will take more time to cook.
