1/2 cup orange juice (approx 2 oranges)
2 tablespoons minced scallions
1 tablespoons minced ginger
1 tablespoons minced cilantro
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 tablespoon vegetable oil
2 teaspoons grated orange rind
Red pepper flakes (optional)
1 pound large shrimp, peeled and deveined
2 oranges-peeled, cut in half and then quartered
Cooking spray

Directions:
Directions:
Combine first 9 ingredients in bowl - toss shrimp till coated and marinate covered in refrigerator for 15 mins.

Reserving marinade, remove shrimp and place on skewers alternating with orange pieces.

For appetizers - use shorter skewers and only one piece of shrimp and one orange

For dinner portions add accordingly - just don’t crowd so they will cook evenly

In large grill pan coated with cooking spray cook over med high heat for approx 4 mins per side or until done - basting with remaining marinade.

Or Grill on BBQ - watching because the heat is generally much higher
