2 eggs
1/2 cup vegetable oil
1 tbsp lemon/orange rind
4 tbsp citrus juice
2/3 cups white/brown sugar
1 1/2 cups grated carrots or zucchini or fruit, etc.
2 cups flour (white, or multi grain, etc.)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
dash nutmeg, cinnamon, or allspice

Options: 1/4 cup raisins, walnuts, chocolate chips or coconut, or a combination of each.

Preheat oven to 450 F.

Combine the first 7 ingredients in a large mixing bowl. Stir in flour, baking powder, baking soda, salt, and spice. Spoon batter into greased muffin pan. Bake at 450 F for 18 to 20 minutes or until cake tester inserted in centre comes out clean. Yields 6 big muffins or 12 small muffins.
