6 large potatoes
2 cups sour cream
4 - 5 green onions, chopped
1 1/2 cups grated cheddar cheese
1 1/2 tsp salt
1/2 tsp black pepper
paprika

Directions:
Directions:
Preheat oven to 350º F.

Bake or boil potatoes with their skins on. Peel potatoes and shred on grater (messy, but worth it!). Stir remaining ingredients into potatoes, reserving 1/2 cup cheese. Place mixture in a buttered 13" x 9" casserole dish. Cover and refrigerate overnight, or for several hours.

Bake, uncovered, 30 to 40 minutes at 350º F until hot and sizzly. Stir once during baking time, then top with remaining 1/2 cup of cheese and sprinkle with paprika and finish baking.
