1-3/4 cup dried lentils
2 cups water
1 whole bay leaf
salt and pepper
2 large onions, chopped
2 cloves garlic
2 cups canned tomatoes
1/4 tsp each of marjoram, sage and thyme (fresh herbs are best)


2 large carrots, sliced
2 celery sticks, sliced
fresh parsley
cheddar cheese

Directions:
Directions:
Preheat oven to 375º. Combine everything except carrots/celery/parsley and cheese and place in 9x13" pan. Cover tightly and bake 30 minutes. Stir in carrots, celery and parsley. Bake covered for 40 minutes until vegetables are tender. Sprinkle top with as much cheese as you like and bake uncovered for 5 minutes or until cheese melts. Serves 6-8. To make this dish non-vegetarian add 1 lb cooked ground beef and/or smoked farmers sausage cut up. The guys like this option. I serve it with a Greek salad.
