1 1/4 pounds green beans, trimmed
1 tablespoon minced shallots
2 tablespoons red wine vinegar
1 1/4 pounds cherry tomatoes, quartered
1 teaspoon chopped oregano
2 1/2 teaspoons extra virgin olive oil
1/2 teaspoon salt
fresh ground pepper

Directions:
Directions:
Cook string beans approximately 5-7 minutes - drain and shock in ice water to stop cooking process. Drain well. Toss string beans, oregano and tomatoes together in a bowl.

Combine shallots and vinegar in a separate bowl - let stand for 10 minutes to bring out flavors. Whisk in oil, salt and pepper until well blended.

Pour vinaigrette over bean mixture, tossing until well coated.
