2/3 cup butter
2 Tbsp sugar
1/2 tsp salt
2 cups flour
2 tsp baking powder
1 egg
1/4 cup milk
1 tsp vanilla
fruit of choice, sugared



Topping:

2 eggs
1/2 cup sugar
1 tsp flour

Directions:
Directions:
Mix butter with sifted dry ingredients (as for pastry).
Add flavorings, beaten egg and milk all at once. Mix quickly to soft dough. Roll or pat into thin sheet (10x12") and spread with sugared fruit. Mix topping ingredients well and drizzle over fruit.
Bake 20 minutes at 375º. Makes approximately 12 slices. You can use any fruit you like. My favorite is rhubarb but apples work well as do plums. Keep in mind the tartness of fruit when sugaring them in preparation for use. This was my Grandmother Froese's recipe.
