1 pkg. active dry yeast
1/3 c. warm water (110 degrees)
2 c. milk
2 c. oats
1/4 c. brown sugar
2 tbsp. shortening, softened
1 tbsp. salt
4-1/2 c. to 5 c. flour
1/2 c. sugar
2 tsp. cinnamon

Sprinkle yeast over water. Set aside for 5 minutes. Scald milk. Add oats, brown sugar, shortening and salt. Cook to lukewarm. Stir in yeast and half of flour. Add remaining flour until a soft dough is formed. Knead until smooth. Place in a greased bowl and let rise until double. Divide dough in half. Roll each half into a rectangle and sprinkle with sugar and cinnamon. Roll like a jelly roll and seal ends well. Place each in loaf pan. Let rise until double.

Bake at 400 for 35 to 40 minutes.
