Basic recipe for 2 people. Adjust for additional people but increase the onion, garlic, and sugar minimally.


1/2 medium onion, chopped
2 cloves garlic, minced
2 tbsp. olive oil
10 to 12 uncooked shrimp, peeled and deveined
1 (14 1/2 oz.) can diced tomatoes, UNDRAINED
1/2 tsp dried parsley
1/2 tsp sugar
1/4 lb. feta cheese, crumbled

Heat oil in a large skillet at medium heat. Saute the onion and garlic until the onion is soft, about 3 to 5 minutes. Add the shrimp to the skillet and cook until just barely done and light pink, about 1 and a 1/2 minutes on each side, depending on the size of the shrimp. Remove shrimp and set aside.

In a pot, combine the cooked onion and garlic with the tomatoes and spices, and simmer for 30 minutes to an hour, stirring occasionally. If preparing this a head of time, simmer for just 30 minutes and take off the heat. About 20 minutes before serving, reheat the sauce.

Cook the required amount of linguine for number of people according to the directions.

About 15 minutes before serving, or when reheating the sauce, add the crumbled feta cheese. Continue simmering until the feta cheese melts into the sauce. 5 minutes before serving, add the shrimp to heat through. Serve sauce and shrimp mixture over the hot linguine.
