2 Tbsp soy sauce
1 Tbsp lemon juice
1 tsp cornstarch
tsp garlic powder
-1/2 tsp red pepper flakes
cup smooth peanut butter


1/8 tsp salt
1/8 tsp black pepper
2 scallions trimmed and thinly sliced
pound steamed snow peas
1 small red sweet pepper, cored, seeded and thinly sliced
2 large boneless, skinless chicken breasts cut in half lengthwise
2 cups cooked white rice

Whisk together soy sauce, lemon juice, cornstarch, garlic powder and red pepper flakes. In pan, whisk together peanut butter with cup hot water. Stir in soy sauce mixture. Bring to a simmer over medium heat until mixture thickens. Set aside. BBQ chicken until done. Slice and serve with rice and peanut sauce. Garnish with pepper and scallions.
