2/3 c. olive oil
1/2 c lemon juice
1 tbsp. oregano flakes dried
1 tbsp. parsley dried
1 medium red onion, chopped
2 or 3 cloves garlic, minced

Salt & fresh ground pepper, to taste

One whole chicken cut up or four chicken breasts with bones.

Combine all the ingredients except the chicken and allow to sit for an hour or so for the flavors to mix.

Marinate the chicken for ½ hour to an hour and then place over a low BBQ flame and cook slowly. Baste and turn frequently till done.

Serve with rice and mushrooms.

This recipe was given to me by my mother and went to Oregon with me where for two years we made it for 200 prospective fraternity members during rush week. To this day whenever we get together with friends from college they ask when are we cooking the chicken oregano.
