2 cups whipping cream
1 5 oz. Boursin cheese
3 lbs. potatoes, thinly sliced
1 1/2 Tbsp. chopped fresh parsley

Directions:
Preheat oven to 400 degrees. Butter 9 x 13 pan. Stir cream and cheese in saucepan till melted. Season with salt and pepper. Layer pototoes in casserole dish and pour cream mixture on top. Bake till tender, approximately 1 hour. Sprinkle with parsley.

I usually make my own boursin cheese. Using a mixer, mix together 1 stick of room temperature butter, 1 pkg room temperature cream cheese, 3 cloves garlic minced,1 tsp. oregano,¼ tsp of each of the following:
Thyme,Marjoram,Dill,Pepper ( I usually put in more),Basil, Pinch of salt
