1 yellow (or spice) cake mix
1 pkg vanilla instant pudding
2/3 cup orange juice
1/2 cup oil
4 large eggs
2 tsp cinnamon
3 cups grated carrots
1/2 cup raisins (opt)
1/2 cup walnuts or pecans

Directions:
Directions:
Mix all ingredients together. Blend on low for 1 minute then beat at medium speed for 2 minutes. Pour into 2-9" round pans. Bake at 350 for 30-35 minutes. Top with icing of your choice if desired.
