1 1/4 c. sugar
2 Tbsp. corn starch
1/2 c. water
1/8 tsp. salt
3 c. rhubarb (sliced)
1 tsp. orange peel (grated)
1 egg (beaten)



Crumb Mixture:
1/4 c. butter
1/8 tsp. salt
1/2 c. sugar
1/4 c. flour
1/2 c. oatmeal
1/2 tsp. cinnamon

Directions:
Directions:
Bring the sugar and cornstarch mixture to a boil. Add 3 cups rhubarb to hot mixture. Add the following very slowly: orange peel and egg. Place rhubarb filling in square 9"x9" pan. Mix crumb mixture ingredients all together until thoroughly blended. Sprinkle the crumb mixture over the rhubarb mixture and bake in a 425º oven 15 minutes or until rhubarb is tender.
