1 can refried beans (with jalapeno peppers optional)
3 ripe avocados
8 oz. sour cream
1 bunch (about 5 or 6) chopped scallions (green onions)
2 chopped tomatoes
8 oz. grated cheddar cheese
8 oz. grated Monterey Jack cheese
Tortilla chips or scoops

Peel and mash the avocados and mix with 1 tsp of lemon juice.

Layer everything in order in a 9 x 13 x 2 pan. This can be served cold or heated (at 250º for 45 minutes to an hour - until cheese melts)
