Apple- Walnut Sauce:
1/4 cup (1/2 stick) unsalted butter
3 cups peeled chopped apples
1/2 cup packed dark brown sugar
1/2 cup dark sweet Sherry
1/2 cup golden raisins
1/4 cup chopped walnuts

Roast:
2 1/2 - 3 lb. boneless pork loin, split
1/4 cup olive oil
1/2 cup water
1/2 cup dark sweet Sherry or pure maple syrup
1/2 cup golden raisins
Salt and coarsely ground black pepper to taste

In a large saucepan, melt butter and cook the apples on medium heat until tender. Add the sugar, stirring constantly, to avoid scorching. Stir in sherry. Add the raisins and walnuts and mix together until well combined. Makes 3 1/2 -4 cups.

Preheat oven to 275º. Wash the pork loin in cool water and pat dry. Stuff the pork with 1/2 cup of the apple-walnut sauce in the split. Tie the loin back together and rub with the olive oil. Sprinkle with salt and pepper.
Place the loin on a rack in a large baking pan and roast for 50-60 minutes. Be sure an instant read thermometer registers 160º. Remove from oven and allow to stand for 15 minutes.
Meanwhile, deglaze the pan on top of the stove with the water and reduce liquid by half. Stir in sherry and raisins and reduce until slightly thickened.
Divide the sauce among the serving plates. Slice the pork and fan out the slices over the sauce. Divide the remaining sauce and place beside the pork on the plate.
Serve immediately.
