1 c. butter
3/4 c. sugar
2 c. flour
1 c. mashed cooked carrots
2 eggs
1 tsp. salt
2 tsp. baking powder
3/4 c. shredded coconut


Icing:
1 1/2 Tbsp. grated orange rind
1/4 c. (or more) butter (softened)
3 Tbsp. orange juice
Enough powdered sugar to make a thin icing

Directions:
Directions:
Combine butter, sugar, eggs and cooked carrots together in a bowl. Set aside. Mix flour, salt, baking powder together and add coconut. Add dry mix to wet mix until well blended. Drop large spoons full onto cookie sheet and bake at 400º for 8-10 minutes.
