6 potatoes, peeled
4 eggs
2 tsp. baking powder
4-6 Tbsp flour
Dash of salt
oil or no stick spray

Directions:
Directions:
Cut and peel potatoes. Blend everything together. Heat pancake skillet with oil or no stick spray.

Pour batter onto hot skillet and fry until nicely browned on one side. Turn over and cook the second side.

Serve with butter or applesauce.

This recipe actually comes from Grandma and Mom. These pancakes were a favorite at our house and continue to be a weekend activity at Linda's. Karen wrote this recipe for me when she spent a weekend at the schoolhouse with us.
