2 C. frozen corn 1 small sweet onion 2 zucchini, chopped 1 red bell pepper ½ C. chopped cilantro 1/3 C. water 1/3 C. sugar 1/3 C. vinegar 2 T. vegetable oil Salt and pepper to taste
Thaw and drain corn in colander, place in bowl, add all other chopped ingredients. In a microwave proof bowl place water and sugar and microwave on high for 1 minute. Whisk until sugar dissolves, and vinegar, oil, salt and pepper, whisk and pour over vegetables. Cover and refrigerate overnight, or at least 2 hours before serving.
