Peel 6 or 7 large potatoes. Boil in pot until tender. Meanwhile fry ˝ pound of bacon, chopped into small pieces until browned. Add 1 cup of chopped onion and sauté. Remove bacon and onion from pan, add 2 tablespoons flour and make a roux. Replace bacon and onion, and add ˝ cup of chopped celery and ˝ cup chopped carrots to roux. Remove potatoes from water (reserve water), mash with a potato masher but leave some chunks. Add roux mixture to potatoes, then add 16 oz. of half and half, and 3-1/2 C. of milk. Add ˝ C. of the reserved water. Stir and simmer until thickens. Salt and pepper to taste. Top with shredded cheddar cheese.
