3-1/2 lb. light brown sugar
2 lb. margarine (or butter)
1/4 C. hot water
Melt those ingredients in double boiler.
Add:
2 T. vanilla
6 eggs (one at a time)
flour (about 3/4 of a 5 lb. sack!), until right consistency

Place a dough ball in a hot cookie press and heat over stove top, turning to heat both sides until cookie is done. Remove and cool before placing in containers. This recipe will make enough cookies to feed a small army of Scandinavians, so I would advise you set aside a day for this experience.

For holiday church functions like Christmas caroling Jeanette Davis always brought those delicious Scandinavian cookies that are made in a cookie iron or press. A few years ago Donna and I found one at a garage sale. I bought it and told Donna, “I’m going to get Jeanette’s recipe for those cookies”. While visiting Jeanette one day, I did ask for the recipe, which she graciously provided to me, along with a hand written note. I’ve never had the nerve, or the heart to make them. I am providing the recipe for anyone who wishes to try. If you want to borrow my cookie iron, let me know.
