¾ C. shortening 1/3 C. milk
1 C. sugar 1 t. vanilla
2 eggs 1 square baking chocolate
1 1/3 C. sifted flour ¾ C. chopped nuts
1 t. salt whole graham crackers
¼ t. soda ¾ C. semi-sweet choc. chips

Blend shortening, sugar and eggs. Beat until mixture is light and fluffy. Sift flour with salt and baking soda. Add to shortening mixture, alternately with the milk and vanilla. Mix thoroughly. Remove 1/3 of the batter to a separate bowl; add melted chocolate and nuts. Spread chocolate mixture in a greased and floured 13 x 9 pan (spread very thin, it barely makes it). Cove this entirely with whole graham crackers, trimming to fit. Add chocolate chips to remaining batter, drop by tablespoonfuls over graham crackers. Spread carefully with a spatula. Bake at 350 degrees 20 to 25 minutes. Remove from oven for 10 minutes, then invert pan, let cool. Replace into pan and ice lightly with your favorite frosting if desired.

“I doubled this for more cookies. It fits just right in a 17 x 12 x 1 inch cookie sheet. Nuts are optional; so many children don’t want nuts in their cookies. These freeze nicely, but do seem to dry out if in a cookie pan for very long. Enjoy!”
