3 large eggs
1/3 C. fresh lemon juice
¾ C. granulated sugar
1 T. finely shredded lemon zest
4 T. butter (room temperature), cut into small pieces

Directions:
Directions:
In a stainless steel bowl placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until blended. Cook, stirring constantly until the mixture thickens (consistency of sour cream). This will take about 10 minutes. Remove from heat and strain if desired. Cut the butter into small pieces and whisk into the mixture until butter has melted. Add lemon zest and let cool. The lemon curd will thicken more as it cools. Cover to prevent skin forming. This will keep in refrigerator for up to two weeks.
