1/2 lb. of bacon, chopped
2 lbs. bok choy, dice the stems (reserve the leafy part)
1 small red onion, chopped
1 tsp. red pepper flakes
1 tsp. minced garlic
3 tbsp. red wine vinager
salt to taste

Directions:
Directions:
Fry bacon in a large skillet over medium heat until crispy. Add the red pepper flakes, onions, bok choy stems, red wine vinegar, salt, and garlic. Cook and stir over medium heat until the onions and bok choy are starting to be tender. Add the bok choy leaves, and place a lid on the pan. Let cook for 3-5 minutes. Remove the lid; cook and stir for about 2 minutes. Serve and enjoy.
