¾ c. (1 ½ sticks) butter, softened
¾ c. all-purpose flour
1 c. warm milk
6 c. hot chicken stock or broth, divided
1 c. warm light (coffee) cream
1 ½ c. chopped cooked chicken
¾ tsp. salt
Freshly ground pepper

Melt butter in Dutch oven over low heat. Stir in flour; cook until smooth and bubbly. Combine milk, 2 c. chicken stock and cream; gradually add to flour mixture. Cook and stir until well blended. Add remaining 4 c. stock, chicken, salt and pepper Heat through.
