2 Tbsp. oil
1 c. raw long grain rice (not converted)
1/4 c. white onion (thinly chopped)
1 can chilis (chopped)
1/2 can jalapenos (if you want to spice it up a bit)
6 green onions (thinly sliced)
1 clove garlic
1/2 tsp. salt
1/4 tsp. ground cumin
1 3/4 c. chicken (or vegetable) broth
1 1/2 c. monterey jack cheese (shredded)
1/3 c. cilantro (coarsely chopped)

Preheat oven to 375º. Heat oil in skillet to medium. Add rice and stir constantly until it becomes an opaque color. Add white onion and cook and stir until moist. Stir in chilies, garlic, salt and cumin. Stir in broth. Bring to a boil, cover and simmer 15 minutes. Remove from skillet. Add 1 cup cheese and chopped cilantro. Toss. Transfer to 1 1/2 quart baking dish. Top with remaining cheese and cook for 15 minutes or until rice is tender.
