1 1/2 Lbs. hamburger
2 cloves garlic
2 onions (diced)
1 can tomato paste
2 cans tomato sauce (small cans)
1 jar spaghetti sauce (64oz.)
3/4 can water (use tomato sauce can)
1 Tbsp. fennel seed
1 Tbsp. oregano (crushed)
1/2 Tbsp. basil (crushed)
1/2 Tbsp. coriander
2 Tbsp. sugar
1/4 tsp. red pepper (crushed flakes)
1 Tbsp. parsley (crushed)
1/2 Lb. (ea.) mozzarella, cheddar, jack cheeses
1 c. parmesan cheese
1 pkg. lasagna noodles

In a frypan or crockpot, saute diced onion, minced clove, garlic and hamburger. Cook until done. Drain off grease. Add spaghetti sauce, tomato sauce, tomato paste and water. Stir in coriander, fennel seed, oregano, basil, sugar, red pepper and parsley. Add salt and pepper to taste. Simmer on low heat for a few hours till thick and blended in flavor. Cook lasagna noodles. Drain. In a casserole dish, layer sauce, noodles and grated mozzarella cheese, cheddar cheese, jack cheese and parmesan cheese and sliced olives. Repeat 3-4 layers. Bake at 375º - 400º for about 40-60 minutes or until hot throughout. Let set 5-6 minutes, cut and serve. If serving more than 6-8, double the recipe.
