500g minced beef
1 onion - Finely chopped
1 cup chopped flat leaf parsley
2 cups rice
50 fresh vine leaves
2 tbsp lemon juice
salt and pepper
1 tbsp butter

Directions:
Directions:
Place the vine leaves in 5 cups of boiling water for 2-3 minutes or until they have changed colour, drain and trim the stems.
Mix beef, onion,parsley,rice,salt and pepper.
Line a medium pan with the stems.
Place each leaf flat , shiny side down.
Spoon a tbsp of mince filling into the centre, fold in the sides and roll up tightly beginning at the stem end.
Place them tightly in the prepared pan in layers add lemon juice, tbsp salt, water to cover the dolmades add the butter and cover with the lid.
Bring to the boil, then reduce the heat and simmer for 45 minutes or more until the rice is cooked.
