30 medium (10 pounds) potatoes, peeled and quartered
12 ounces cream cheese, room temperature
2 cups sour cream
4 teaspoons onion powder
2 teaspoons salt
1 teaspoon pepper
4 egg whites, slightly beaten
2 tablespoons butter

Directions:
Directions:
Spray two large crock pot liners with vegetable-oil cooking spray.

In a large pot of boiling water over medium-high heat, cook potatoes until tender when pierced with a fork; remove from heat and drain. In the crock pot liners mash potatoes until there are no lumps. Add cream cheese, sour cream, onion powder, salt, pepper, and egg whites; blend well. Dot with butter. Cool slightly, cover, and refrigerate.

Take potatoes out of the refrigerator 30 minutes before heating.

Place crock pot liners in crock pots. Put on high, covered, until steaming hot in center. 1-2 hours. I have to use the microwave to help me get them hot.

NOTE: This can be made up to a week ahead. If preparing ahead, place in an ovenproof baking dish, allow to cool slightly, cover, and refrigerate.
