1 pound ground beef
1 medium onion, chopped
1 can black beans, liquid included
1 can whole-kernel corn, liquid included
1 large can chopped tomatoes, liquid included
1 quart Swanson's organic chicken broth
1 pkg taco seasoning mix
Crushed tortilla chips and grated cheese for garnish

Directions:
Brown ground beef and chopped onions together. Add remaining ingredients; bring to a boil, cover, and simmer for a few minutes to blend flavors. Serve with garnishes.

Don't be misled by the simplicity of this recipe; it is delicious! I like to use the extra hot taco mix. The great thing about this recipe is that you can keep the ingredients on hand and have dinner ready in less than a half hour. Enjoy!
