2.5 lb (1 kg) yam, cut into cubes
3 cup (450 g) tapioca flour
4 garlic cloves, minced
1 Tbsp peanut oil
2 tsp fish sauce
3 cups (700 ml) water

Ingredients B
1 lb (450 g) lean pork, cut into strips
4 oz (110 g) dried prawns, wash, dry and cut into small pieces
4 oz (110 g) cuttlefish, wash, dry and cut into thin strips
4 oz (110 g) dried mushrooms, soak in warm water to soften. Slice thinly.
2 Tbsp peanut oil
Fish sauce to taste

1. Fry garlic with oil till lightly brown. Add yam cubes and fish sauce and fry for a minute.
2. Add in water and bring to boil. Turn heat to low and simmer yam till very soft and mushy. Leave to cool.
3. When yam is at room temperature, mix in tapioca flour and knead into a dough. Remove hard pieces of yam.
4. Roll a small piece of dough into a ball. Depress the middle so it resembles an abacus. Make more abacus pieces till the dough is used up.
5. Bring a pot of water to the boil and put in some oil. Drop abacus yam into the hot water to cook. Once the pieces float on the surface, they should be taken out immediately and soak into a basin of cold water to stop further cooking. Drip dry in a strainer before storing into the fridge.
6. Before frying the yam pieces with other ingredients, soak the yam in cold water and drip dry in a strainer.

1. Fry dried prawns and cuttlefish till they turn golden brown. Add mushrooms and stir fry for a minute or two before adding the pork.
2. Stir fry mixture till pork is thoroughly cooked.
3. Adjust taste with fish sauce. Mix in the abacus yam pieces and serve hot.

This is a favorite party dish. The abacus yam pieces may be prepared ahead of time and refrigerate till ready to use. The meat ingredients may be prepared ahead and keep till ready to use.
