4 eggs
1/2 vegetable oil
1 c. unsweetened pineapple juice concentrate
1/4 c. unsweetened orange juice concentrate
2 1/4 tsp. cinnamon
1 1/2 c. packed, grated carrots
2 1/2 c. all-purpose flour
2 1/2 tsp. baking soda

Directions:
Directions:
Preheat oven to 375. Grease and flour a 13 x 9 x 2-inch baking pan.
In large bowl combine eggs,. oil and concentrate juices. Beat mixture until foamy on medium speed.
Add cinnamon, carrots, and flour; stir by hand until mixed thoroughly.
Add baking soda; stir quickly to mix. Immediately pour batter in pan.
Bake for 30-35 minutes. Cool on wire rack.

Cream Cheese Frosting:
1 (3 0z.) pkg. regular cream cheese softened
1/4 c. low calorie margarine, softened
32 pkgs. artificial sweetener (Equal or Splenda)
1 tsp. vanilla

Suggestion: Mix 1/2 c. chopped pecans in frosting for an attractive carrot cake.
Reduced-fat cream cheese tends to crack the icing.
