1 c. mashed potatoes
1 heaping Tbsp. margarine
3 drops vanilla
1 lb. confectioners' sugar
peanut butter

Directions:
Directions:
Add margarine to potatoes while they are still hot. Add vanilla and stir. Add about 12 oz. of confectioners' sugar and mix well. Use 1/2 of remaining sugar to flour table. Roll out potato mixture like a pie crust 1/4 to 1/2" thick. Sprinkle with more sugar and spread peanut butter. Roll like a jelly roll and slice.
