1/4 Cup butter
3 green onions, chopped
2 carrots, grated
1 l0oz. can chicken broth
1 101/2 oz. can cream of potato soup
8 oz. cheddar cheese, shredded
8 oz. sour cream
salt and pepper to taste
milk, opt.
Directions:
Directions:
melt butter in large sauce pan. saute onions and carrots. add chicken broth. cook on low heat 20 minutes.
Add soups, cheese and sour cream. stir well. cook slowly until cheese melts. do not boil. season to taste dilute with milk if necessary
