1 C shortening
1 C white sugar
1 C brown sugar
2 eggs
1 cups flour
1 tsp soda
1 tsp salt
1 tsp vanilla
3 cups oatmeal
1 cup coconut
1 C raisins

Directions:
Directions:
Cream shortening and sugar add eggs and stir well add flour, salt, soda, oatmeal and coconut. Shape into large balls. Bake 8- 10 min at 350 cookies should be under baked, cool on wire rack while cookies are still warm place on plate & cover with clear wrap this keeps them moist. Also use fresh coconut it adds moisture to the cookie. For those of us who do not like coconut these cookies become so soft that the coconut is hard to detect.
