1 C shortening
1 C white sugar
1 C brown sugar
2 eggs
1 ½ cups flour
1 tsp soda
1 tsp salt
1 tsp vanilla
3 cups oatmeal
1 cup coconut
1 C raisins

Directions:
Directions:
Cream shortening and sugar – add eggs and stir well – add flour, salt, soda, oatmeal and coconut. Shape into large balls. Bake 8- 10 min at 350 – cookies should be under baked, cool on wire rack – while cookies are still warm place on plate & cover with clear wrap – this keeps them moist. Also use fresh coconut – it adds moisture to the cookie. For those of us who do not like coconut – these cookies become so soft that the coconut is hard to detect.
