2 (8 oz.) packages prepared manicotti
2 lbs. sweet Italian sausage or ground beef
1-1/2 c. finely chopped onions
1 clove garlic, minced
2 (16 oz.) cans diced tomatoes
3 (8 oz.) cans tomato sauce
2 T. snipped parsley
2 T. sugar
1 T. dried basil, crumbled
1 tsp. dried oregano, crumbled
1/2 to 1 tsp. salt
1/4 tsp. pepper
2 (16 oz.) cartons ricotta cheese or 3 (12 oz.) cartons or 3 c. cottage cheese
1 (8 oz.) package mozzarella cheese, diced
1/3 c. freshly grated Parmesan cheese
2 eggs
1 tsp salt
1/4 tsp pepper
1/4 cup freshly grated Parmesan cheese
1/4 c. snipped parsley

Prepare manicotti; set aside. Brown meat; drain off excess fat. Stir in onions, garlic, tomatoes, tomato sauce, 2 T. parsley, sugar, basil, oregano, 1/2 to 1 tsp salt and 1/4 tsp pepper. Simmer 30 min., stirring occasionally. Combine ricotta cheese, mozzarella cheese, 1/3 c. Parmesan cheese, eggs and remaining salt and pepper in large bowl. Spread about 2 heaping T. filling in each manicotti. Spoon 1/2 c. sauce into each of two 9x13 inch baking pans. Arrange manicotti in single layer in pans; pour sauce over manicotti. Garnish each pan with 2 T. Parmesan cheese and 2 T. parsley. Bake, uncovered, in a 350º oven until bubbly, 35 to 40 min. Let stand 5 to 10 min. before serving.
