8 large bell peppers, cut in about 1 inch strips (I use red, yellow, orange, and green)
2 medium sweet onions, sliced
5 1/2 T. sugar.
4 T. wine vinegar
1 (15 oz.) can tomato sauce
1/2 cup bread crumbs (browned)
olive oil
salt and pepper

Directions:
Directions:
To brown bread crumbs, put them in a skillet on high heat; cook, stirring constantly until browned. Set aside. Fry the peppers and onions in about 3 to 4 T. olive oil. When tender, add all the other ingredients, except the bread crumb; add a little salt and pepper. Cook until very tender. Pour into baking dish and sprinkle some of the bread crumbs over top. With a spoon, move it around a little so that the crumbs gets into the vegetables. Sprinkle more bread crumbs over the top. Drizzle a little olive oil over the top. Bake in a 350º oven just to brown.

Note: You may not need all the bread crumbs. You don't want it to be too dry.
