chicken breast cutlets in amount you need
butter
3/4 cup dry white wine
1/2 cup chicken broth
8 oz. mushrooms, sliced
mozzarella cheese, shredded
(adjust amount of ingredients as needed)

Directions:
Directions:
Pound the cutlets lightly. In a non-stick skillet, add butter and fry the cutlets until golden. Remove and set aside. To the hot skillet, add the dry white wine, chicken broth; stir to break up any pieces. Add fresh sliced mushrooms. Cook 5 minutes, then add chicken back into the skillet. Cover and cook on low for 30 minutes. Just before serving, add shredded Mozzarella cheese on the top of each piece of chicken. Replace lid and leave just until cheese melts.

Can substitute with veal or pork.
