1 1/2 Cups (3 sticks) butter, at room temp.
1 Cup Granulated sugar
1 Cup light brown sugar
3 eggs
3 Cups All purpose Flour
1 teaspoon baking soda
3 teaspoon cinnamon
1/2 Teaspoon nutmeg
5 apples, peeled cored and cut 1/2 inch
1 Cup pecans
1 teaspoon vanilla

Heat oven to 325. In a large bowl using electric mixer on medium beat butter and both sugars until light and fluffy 3 to 5 minutes. Add the eggs one at a time.
In another bowl combine flour, baking soda, cinnamon and nutmeg. Gradually add the flour mixture to the egg mixture.
Batter should be thick. Stir in apples, pecans and vanilla.
Scrape into buttered and floured 9x13 inch pan. Bake until toothpick inserted in the center comes out clean. leave cake in pan. let cool for 10 minutes, while you make the glaze.
Caramel Glaze:

4 tablespoons butter
1/4 Cup granulated sugar
1/4 brown sugar
1/2 Cup heavy cream
In saucepan over medium heat melt butter. Add both sugars Cook, stirring frequently for 2 minutes. Stir in the cream and bring to a boil. Cook stirring constantly for 2 more minutes. remove from heat.
make holes on cake and pour warm glaze. Add ice cream if desired.
