8 c. mixed mesculun greens
2 c. dried cranberries (craisins)
8 oz. strawberries, quartered
1 large mango, pitted & cubed (optional)
˝ c. chopped red onion
1 c. slivered almonds

Dressing:
ľ c. canola or vegetable oil
1/3 c. balsamic vinegar
˝ c. sugar
1 tsp.

Directions:
Directions:
Mix all salad ingredients together except for almonds.
Prepare dressing separately and shake up in jar or cruet. Toss salad with light amount of dressing. Add almonds right before serving.

This makes a very large salad – can cut the recipe in half and it’s enough for 8 people. This salad is always a big hit, any time of year!
