Ingredients:  
8 oz. pkg. Sorrento fresh mozzarella, sliced
3 cups salad greens
3 ripe tomatoes, sliced
2 Tbsp. fresh basil, chopped


Dressing:

1/4 cup olive oil
3 Tbsp. balsamic vinegar
Freshly ground pepper, to taste
1/2 tsp. Dijon mustard
1/4 tsp. salt, to taste

Directions:
Directions:
Mix vinegar, mustard, salt and pepper together.
Add oil and whisk until blended.
Spread greens on plate and cover with tomato slices. Arrange cheese slices on top of tomatoes.
Drizzle dressing over salad. Sprinkle with basil.
Serves 4
