4 ripe bananas(3 if they have been frozen)
1/2 c. plain non-fat yogurt (or sour cream)
1 tsp. baking soda
1 tsp. salt
1 1/3 cup sugar
1/2 cup canola oil (or 1/2 c. applesauce)
2 eggs (or eggbeaters)
2 c. flour
1 tsp vanilla

Mash bananas (I do not use the blender, it seems to work better if you do it manually) I use a fork, then add 1/2 cup yogurt and mix in 1 tsp. soda. Let stand while you mix all the other ingredients in a separate bowl. When all mixed Pour in the banana mixture and stir well, but do not over mix. Bake 1 hour and 15 min. at 340 degrees. If you use to small pans your time will vary. I usually like using smaller pans.
