1 large frying chicken
Salt and pepper
1 cup flour
4 large eggs (beaten)
2 cups oil or lard, heated

Directions:
Directions:
Wash and cut up chicken. Salt and pepper the chicken, let stand for 15 minutes. Dip each piece into flour, shake off excess, dip into the egg. ( you can add a little milk to the egg) then dip in the flour again. Fry until golden brown. Place into a heavy roaster, add a small amount of water, and put in a 350 degree oven for about an hour.

I have been frying chicken since I was ten years old, but after Nick saw this recipe in the 2000 Martin Reunion memory book, I always make it this way. It is Emma and Evan's favorite and I always make it for them when they come to visit.
